Salad – Chicken Waldorf with light lemon aromatics.

  1. Marinate
  • Scrape the lemon skin or zest of half of lemon using a peeler.
  • Juice half of the lemon and put it in a bowl.
  • Take large bowl and add chicken without skin to it.
  • Make two horizontal cuts on the chicken to make fillets.
  • Add lemon zest, pepper, salt and 1 tsp oil into it.
  1. Toasting
  • Put the nuts in a medium flame on a medium sized fry pan.
  • Keep tossing the nuts for two-three minutes.
  • As soon as the nuts turn golden brown, set it aside.
  1. Cooking
  • Take same fry pan and heat it on high flame.
  • Add chicken to it and cook for 4-5 minutes on each side.
  • Now remove the fry pan for 5 minutes.
  1. Other ingredients
  • Now thinly slice the apple and add half of the lemon juice, you squeezed before.
  • Add water into the bowl for prevention from browning in apple.
  • Add trimmed and thinly sliced celery to it.
  1. Salad Dressing
  • Take lemon juice, sugar, mustard and add 3 tsp oil it in a large bowl.
  • Stir it continuously.
  • Add salt and pepper for taste.
  1. Assembling
  • Take a bowl and add apple, celery, walnuts, rocket into it.
  • Also add salad dressing and cover the whole sliced chicken.
  • Divide the salad according to servings ordered and serve it on top of

Chicken Noodles – five spiced with sesame sauce

  1. Ingredients Preparation
  • Finely slice garlic.
  • Chop whole broccoli into small pieces.
  • Also chop coriander inclusive of stems.
  • Cut cabbage into long but fine trimmed 2cm pieces.
  • At last, trim chicken. Make two horizontal fillets and add three cuts to each fillet.
  1. Sesame Sauce Making
  • Whip tahini using fork.
  • Take tahini, 1 tsp soy sauce, sugar and 125 ml water in a pan. The flame must be kept low.
  • Heat until mixed and soothed.
  • Remove from flame and try using lid to cover it.
  • Take another medium saucepan and boil noodles in it.
  1. Cooking
  • Take Chinese 5 spices in a bowl with salt and pepper.
  • Add chicken into it.
  • Also add 1 tsp oil and stir.
  • Put it on flame and heat for 3-4 minutes.
  • Cook both sides equally until the chicken is properly tendered.
  • Remove flame and rest.
  1. Noodles
  • Boil noodles as per the standard criteria.
  • Drain water and add 2 tsp of oil to separate all the strands from each other.
  • Keep noodles warm by putting it in a low flame fry pan.
  1. Vegetable
  • Fry garlic in 1 tsp oil in a fry pan and stir for 20 seconds.
  • As it achieves the golden color, add cabbage and fry again.
  • After 2 minutes, add broccoli, 1tbs water and 2 tsp soy sauce.
  • Fry while stirring for five minutes on slightly high flame to give vegetables a crispy and soothed texture.
  1. Serving
  • Toss vegetable while adding coriander to it.
  • Divide noodles, chicken and vegetables to bowl as per the servings ordered.
  • Also add sesame sauce over top of it.

Cucumber ribbon salad served with Asian Caramel Chicken

  1. Rice Preparation
  • Take rice in a bowl and add water to it until clean.
  • Boil the rice by taking a saucepan with 250 ml water.
  • Put it on low flame.
  • Cook for 12 to 15 minutes.
  • As soon as the rice becomes tendered, remove from flame.
  • Also remove extra water from it.
  1. Chicken preparation
  • Chop garlic and ginger into fine pieces.
  • Cut out fat from chicken.
  • Cut thigh into 2-3 pieces.
  • Add black pepper to it.
  1. Chicken browning
  • Add 1tsp oil in a fry pan on high flame.
  • Cook chicken for 3-4 minutes. (until browned)
  • Remove flame and set chicken aside.
  1. Caramel sauce
  • Take same fry pan.
  • Add garlic and ginger to it.
  • Cook and stir for 1 minute.
  • Add 60 ml water to the fry pan and keep stirring.
  • Add soy sauce, sugar, rice wine vinegar (half).
  • Continue stirring.
  1. Chicken
  • Add the set aside chicken to the fry pan until it starts boiling.
  • Now cover the lid of the pan and let it simmer for 5 minutes.
  • Cook until sauce becomes thickened.
  1. Serving
  • Using any vegetable peeler, cut carrot and cucumber into long ribbons.
  • Chop coriander.
  • Put carrot herbs and cucumber in a bowl.
  • Toss to combine.
  • Add thinly cut spring onion.
  • Divide all the ingredients into plates i.e. rice, chicken, sauce and salad.
  • Garnish spring onion on top of it and serve.

Cheese burgers; Porcini crusted served with sweet potato wedges and tomato relish

  1. Wedges Preparation
  • At 220C, put two oven trays garnish with baking powder init.
  • Cut sweet potato by scrubbing it against the cutter and make 2.5 cm think wedges.
  • Spread 2 tsp oil and add salt and pepper to it.
  • Bake for 20 minutes until it turns golden.
  1. Ingredients preparation
  • Chop onion.
  • Slice half of the cheese and leave the other half aside.
  1. Relish cooking
  • Put a saucepan on medium flame and add 1 tsp oil in it.
  • Cook chopped onion for 3 minutes.
  • Add tomatoes to the onion and squash it to make gravy.
  • Add vinegar and sugar with salt.
  • Cook for more ten minutes until relish thickens to become gravy.
  1. Coat patties
  • Heat 2 tsp oil in other fry pan
  •  And add porcini powder to it
  • Add salt and pepper
  • Finally add patties in powder mixture
  1. Patties cooking
  • Cook patties in fry pan until golden brown
  • Remove fry pan from flame and add it to other oven tray.
  • Cover patties with slice of cheese.
  • Now cook again for 4 more minutes until cheese has melted.
  1. Serving
  • Cut buns from middle into two equal portions.
  • Heat for 2-3 minutes.
  • Put relish on on side of bun.
  • Put each base with cheese patty and salad leaves.
  • Now cover it with other remaining half of burger.
  • Now serve these burgers with sweet potato wedges.

Vegetarian San Choy Bau served best with Chilli Jam and Tofu

  1. Vegetables arrangement
  • Take a saucepan with water and salt to boil beans.
  • Chop garlic and ginger.
  • Make 4 vertical pieces of carrot and slice them.
  • Cut beans into small pieces of 2 cm.
  • Refrigerate washed lettuce leaves to make it crispy.
  1. Sauce Preparation
  • Chop the chestnuts
  • Chop coriander
  • Add oyster sauce to it

  1. Cut Tofu
  • Add beans to boiling water for 2 minutes until they become tender
  • After the 2 minutes remove the hot water
  • Wash it from cold water

  • Cut tofu in small pieces of 1 cm
  1. Vegetables cooking
  • Take 1 and half tsp oil in a pan
  • Fry ginger and garlic over medium flame
  • After 1 minute a carrot and water and chestnut to it
  • After that add sauce mixture
  • Finally, fry again for 2 minutes
  1. Chili jam
  • Add chili jam (half) to this mixture
  • Lastly stir again for 2-3 minutes
  1. Serving
  • Finally add Tofu, beans and coriander in a pan
  • After adding the tofu and beans, fry it for 30 seconds until they began to warm
  • Now fill the lettuce cups with Tofu fillings and serve it to the guests

After that you will need to add the beans, tofu and coriander to the pan and stir-fry gently for 30 secs or until just warmed through. Now you can serve the lettuce cups with the tofu filling.
